A reader asked me for the recipe of this dish.
When I need a hot vegan/vegetarian comfort dish that is easy to prepare and flavorful, I always fall back on this time tested dish.
Khichdi
Ingredients
1cup basmati rice
1/2 cup split green moong dal (or mung as it is called in English)
4 cloves
1/2 inch cinnamon
1 tsp cumin seeds,
1 onion sliced,
1tbsp olive oil and
2 tbsp ghee (clarified butter),
11/2 teaspoons salt (Or as needed)
1/4 teaspoon turmeric
2/12 cups water
Recipe
- Heat 1 tbsp oil, add cumin seeds, cloves, cinnamon and saute for a few secs, then add sliced onions and saute till onions turn translucent.
- Wash the dal and rice together and drain the water.
- Add it in the onion mixture and saute all of them for 2-3 min.
- Finally add water, turmeric and salt and pressure cook (you can pour the mixture in rice cooker and cook it that way too)
- While serving top the hot khichdi with a little bit of ghee. Enjoy this mouthwatering rustic dish with hot Indian pickles and/or plain yogurt
